CHRISMONT Cabernet Sauvignon 2016
The Chrismont label is dedicated to classic European varietals, with this Cabernet Sauvignon the perfect fit. Made from fruit harvested off the renowned Jacko’s Block in King Valley, we’ve also upped the anti by releasing this vintage with some bottle age to complete (or start!) the benefits of fine cellaring for you.
COLOUR: Dark red with crimson hues.
AROMA: Lifted blackcurrant and blueberry aromas backed with subtle herbs and spicy oak.
PALATE: Bright berry flavours on the front palate moving to classic capsicum mid-way with cedary oak and textured tannins on the finish.
“The grapes are crushed and fermented in two batches; one on skins for seven days before being drained off, and the other fermented and left on skins for an extra four weeks extended maceration. These two variations help to show off the classic cabernet structure, while also assisting to maintain colour vibrancy and varietal flavours. The new wine is then racked into new and older French oak Hogsheads for malolactic fermentation and 18 months maturation before being blended and prepared for bottling. The wine is released after an extra six to twelve months age in bottle.” Warren Proft, winemaker
